    How to Cook Indian Foods – North India

    You’ve probably read the previous piece on North Indian breads. This article focuses on North Indian cooking, which includes cooking style, spices used, terminology and some common foods.

    North Indian cooking is nearly always quite spicy and uses a large number of spices in any given dish. The terms used for various dishes are normally descriptive of the food itself like Jeera Aloo for instance, which literally translates to ‘Cumin seed Potatoes’. Like most cultures there are also some misleading names like ‘Butter Chicken’, which is actually marinated chicken cooked in a tandoor and served in smooth, tomato gravy and doesn’t contain any butter. There are also terms which aren’t related to the food in question, like Pulao, which is rice cooked with spices and vegetables. The term sabzi (sub-zee) is used quite liberally when describing nearly any dry, vegetable preparation. The same applies to the term dal, which is used for most types of lentils. The term tari (tuh-ree) denotes gravy and is suffixed to the name of a dish when it has gravy.

    In these days of fusion food, it is difficult to pin down a set of spices that a given region can claim. However, traditionally, north Indian cooking uses the following spices and herbs:

    • Cumin seed (Jeera)
    • Ajowan or (Ajwain)
    • Red Chili Powder I – Flavor over color (Lal Mirch)
    • Red Chili Powder II – Color over flavor (Degi Mirch or Kashmiri Mirch)
    • Turmeric Powder (Haldi)
    • Dried Mango Powder (Aamchur)
    • Coriander Seeds (Sabat Dhania)
    • Coriander Powder (Dhania)
    • Fresh Coriander Leaves (Hara Dhania)
    • Green Cardamom (Choti Elaichi)
    • Black Cardamom (Badi Elaichi)
    • Cinnamon (Dalchini)
    • Garam Masala – A set mixture of spices – roasted cumin, cinnamon, cloves, caraway seeds, nutmeg (and/or mace) and green cardamom seed or black cardamom pods. The composition of Garam Masala changes from region to region.
    • Dried Fenugreek Leaves (Kasuri Methi)
    • Black Mustard Seeds (Rai)

    This list is by no means complete – there are many more spices used in every day North Indian cooking – the purpose of this article however is to provide a feel for North Indian cooking.

    Different spices are used in different situations, in different ways. The flavor and characteristics of spices change if you’re dry roasting them, frying them, adding them before simmering to cook or after cooking.

    Our first foray into traditional North Indian cooking could start with a simple vegetable preparation, which we could either call Aloo ki Sabzi (‘Vegetable Preparation of Potatoes’) or Jeera Aloo (Cumin seed Flavored Potatoes).

    Cumin Seed Potatoes / Jeera Aloo

    Ingredients

    - 3 Large Baking Potatoes

    -One onion, chopped fine

    -1 tsp Cumin seed

    -1 tsp Turmeric Powder

    -1 tsp Chili Powder

    -1 tsp Coriander Powder

    -1 tsp Dried Mango Powder

    -Salt to taste

    -Chopped fresh coriander for garnishing

    -Oil for frying

    Method

    First peel your potatoes, dice and then boil in lightly salted water. Then drain and let cool. Heat oil in your pan and add the cumin seed. After 2 – 3 seconds of crackling, add the onions and fry, stirring lightly for about a minute on low heat. Now add all the spices, except the dried mango powder and mix well. Throw in the potatoes, which should be nice and firm now and toss well, so the onion-spice mixture coats the potatoes all over. Simmer for about 5 – 7 minutes. Finally, add the dried mango powder and toss the potatoes on high heat, till there’s a thick, spicy sludge adhering to the potatoes. Garnish with the fresh, chopped coriander prior to serving.

    These can be served with Rotis, filled in toasted sandwiches or just eaten as is for a snack.

    As you can see, this everyday dish uses 5 different spices and one herb. There are some traditional dishes that use up to 30 different spices! These are now (in most part) a thing of the past and cooked only on very special occasions.

    As an example, let’s say we’d like to try our hand at cooking a simple north Indian dish without a recipe, simply going by the style. Obviously we’ll need some north Indian spices, the most common of which are Jeera (cumin seed), Haldi (turmeric powder), Namak (salt) and Mirch (chili powder). The first step, in nearly every dish is to fry onions as it is a staple in north Indian cooking. When pink/transparent, we add some spices and fry some more. This gives us a thick sauce to which we can add a little water if we wish. This sauce will coat the vegetables or meat we’ll add later. Here’s a simple example.

    Onion and Tomato Sabzi / Pyaaz Tamatar ki Sabzi

    Ingredients

    -3 Large tomatoes, chopped roughly

    -Two Onions, chopped roughly

    -2 large cloves of garlic, finely sliced

    -1 tsp Cumin seed

    -1 tsp Turmeric Powder

    -1 tsp Dried Mango Powder

    -1 tsp Chili Powder

    -Salt to taste

    -Oil for frying

    Method

    The process is really quite simple – we heat a little oil, add the onions, fry a little, add the garlic and continue frying till the onions are pink or translucent. Then we add the rest of the spices except the dried mango powder, mix well and finally toss in the tomatoes. The dried mango powder goes in at the end.

    One major feature of Indian cooking is that vegetables are rarely left crisp or crunchy. They’re nearly always cooked till they’re very soft. This isn’t very good for the nutrition content of the veggies and I’d recommend cooking them till they’re just done and still have a bit of bite left.

    The pan will be kept on a simmer for 5 – 10 minutes, till the tomatoes are cooked through. Finally we stir in the dried mango powder and it’s ready to eat! This dish is usually eaten with Rotis.

    As you can see, the pattern is similar – fry onions (if using), spices, toss in vegetables, nuke them (or not) and serve. Now that we have an idea of the basics involved, let’s get on to the secrets!

    The Cooking Methods (by Naheed)

    Secret 1: Bhuno well.

    This is an extremely important process and involves frying spices to extract most of their flavor. Remember not to overheat the oil (unless it is mustard oil, which has to be heated till it emits some smoke & does not froth when something is put in it). If dry powdered masala is being used, the oil should not be hot as the dry spices will burn. Some amount of water must be added if you feel the spices may burn. When making the masala, use onion paste along with ginger & garlic to which you will add other spices as required.

    For meat however, the method is quite different. This is the last process for cooking meat in quite a few cases, or the process just before adding water to make the gravy. It is believed the real flavor of meat develops only if you devote upward of 10 minutes to this process. Meat releases some of its own fat which mixes with the spices and then the oil cooks the meat and helps the meat absorb the mixed flavors of the spices. How long to do so, is a question that has no fixed answer. As a guideline, stop when either the meat becomes too tender or the gravy becomes completely dry, or your guests start to get very restless. You will also notice that the meat & gravy tend to stick to the vessel if you do not stir them constantly. If they do, scrape it off; and if the gravy gets too dry, add yoghurt or water.

    Secret 2: Bagharna

    This is a simple process and is called Chaukna in Hindi. Here dry spices are added to hot oil and this concoction is added to a dish (e.g. Dal). Although a simple process, do not burn the spices. In fact it is advised that once you have added the spices, remove the vessel from the fire.

    Secret 3: Dum Cooking

    This is the art of slow cooking. It enables individual flavors to intermingle properly. This is also the method used for the last few minutes when cooking rice or biryani. In the old days, when food was cooked on coal or wood, the only way was to raise the distance between the flame & the vessel, or put the vessel in the dying embers, seal the lid of the dish with flour & put a few embers of coal on top of the lid. In dum cooking, it is essential the fire be at its lowest and the food will therefore take a while before it’s done. Rest assured that your patience will be amply rewarded. Thankfully modern cooking presents us with newer methods and one of the easiest is to put the whole vessel in an oven. If you do not have one, put a griddle (tawa) on the flame & then put the vessel on it. Also note that dum cooking meat will make the ingredients (meat, vegetables) exude the moisture or water within. A word of caution here: Try not to use a pressure cooker or the meat will not turn out right.

    Secret 4: Frying

    Simple you’d say. Well, yes it is. However, there are two types of frying. One is frying to cook and the other one to brown. For deep frying it is essential that there be sufficient oil to cover the item. For browning, the oil can be less but must be at a low temperature.

    Secret 5: Using earthenware

    Not only is earthenware cheap in India but it was also the first form of disposable crockery. Most desserts in India were traditionally served either on banana leaves or in earthenware crockery. Some of the better known five star restaurants in India still use earthenware. If you’ve noticed, tea at Indian railway stations is still served in earthenware glasses. Not only is it environmentally friendly, a special earthy flavor permeates the tea, which no cooking method can simulate.

    Secret 6: Kewda Water

    Kewda is the derivative of a desert plant with very fragrant leaves. The essential oil of this is heavily diluted in water which is used as a perfuming agent for food. Typically used in Firni and Zarda among other desserts and has no parallel.

    The Ingredients

    Secret 1: Dahi or Yoghurt

    This is a wonder ingredient. Yoghurt lends a light buttery flavor to the creation as well as a light creamy consistency. For example, it is the base for some dishes like Rizala where the original flavor of yoghurt is completely transformed. Yoghurt when cooked transforms in taste to lightly sour and gives the gravy a creamy texture. All in all, it is an essential item. In a few dishes, it may be substituted by tomato puree but then the final result will be slightly different. Did you know vegetables cooked in yoghurt retain their shape? In fact in Dumpukth Fish, it is the yoghurt that preserves the shape of the fish. Also, at times if you have mistakenly added extra salt, add a splash of whisked yoghurt and cook for a while.

    Secret 2: Onions

    This is an essential ingredient in a lot of dishes and is commonly used for salads. A handy tip on handling onions is to remove the outer dry skin, cut in half and wash thoroughly to prevent your eyes from watering. Onions lend a sweetish flavor to cooking and are a common masala base. However when fried then mixed, the taste is totally different. So when the recipe says “fry onions”, you’d better fry them.

    Secret 3: Cumin

    There are two types of cumin seeds. The common white cumin seeds which are cheap are used mainly in vegetarian dishes. They are more often than not fried to get their flavor out. Sometimes as in a raita, they are dry roasted on a tawa and then ground. However, the more expensive black cumin seeds or Shah Jeera as they are commonly known as, are quite different in taste and flavor. The two are rarely substituted. Most restaurants substitute them in rice preparations, but then, what you get is something totally different.

    Final Recipe

    Now that we have quite a good idea of what’s involved in North Indian cooking, perhaps a slightly complex recipe is in order – Nihari. This is definitely not one of the dishes that one finds on the menu of five star restaurants. This is one of the dishes eaten with a lot of passion by all. In fact to have Nihari one must have the zest to wake up before dawn because it is a very hot meal and in most places where it is served, the service is over by 9am. It is a delectable broth of meat, cooked over a slow fire, mostly overnight and eaten in the early hours of the morning with a tandoori roti and an assortment of fresh herbs accompanied by loads of lemon. The meat is fulfilling and the broth is had as a refreshing and a rather hot soup. The other reason why one has it as a breakfast meal and that too only in winter is because it makes you feel very thirsty and rather warm. Don’t tell me I didn’t warn you.

    Nihari

    Ingredients

    • 1 kg Nihari meat (or any other meat that’s available)
    • 250 grams Onions, sliced
    • 3/4 cup Ghee
    • 2 tbsp ginger paste
    • 2 tbsp garlic paste
    • 2 tbsp dry roasted chickpea flour
    • 1/2 – 1 tsp red chili powder
    • 1 tsp Coriander powder
    • 1/4tsp Turmeric powder
    • Salt to taste

    Spice mixture

    Grind together the following:1/4 tsp. dried ginger, 1/4 tsp. mace, 1/2 tsp. fennel, 1/2 tsp. white cumin seeds, 2 large cardamom, 4 small cardamoms, 4 cloves, 6 black pepper seeds

    Preparation

    Preparation time 30 minutes | Cooking time 2-3 hours

    • Add 2/3rd of the onions in moderately hot oil and when the onion goes soft add ginger & garlic paste along with ground coriander and turmeric powder and let it fry for about 3-4 minutes or until the oil comes on top again.
    • Add the meat and cook over slow fire. The meat will let out its own water.
    • When it is semi cooked, add the chick pea flour to 2 cups of water and leave the broth to cook over very slow fire for at least 45 minutes.
    • The slower you cook the more flavors you will draw out.
    • Keep the pot covered but no pressure cookers please.
    • When the meat is as tender as it can get, add the spice mixture along with the leftover onions.

    On a parting note, while cooking methods remain largely consistent and typical, knowing the spices will help tremendously. So while you’re cooking go on and add that sprinkle of black mustard seeds to hot oil and watch them crackle or throw in some curry leaves and savor the change in flavors!

    Survival of the Savvy was on my bookshelf about a month before I had the privilege of meeting the author, Rick Brandon, at a leadership conference in San Francisco where we both were speaking. Our talks were at different times so I was able to attend Rick’s presentation.

    That was when I realized how important this book could be to all the women I work with who are sometimes underestimated, overlooked, and denied proper recognition for their accomplishments because they abhor and avoid anything associated with the word politics. If this sounds like you, you are not alone.

    Survival of the fittest! That is what it feels like in the work world sometimes. I know how tough it can be. I have worked in business since the mid 1980′s where I have witnessed political games of all sorts – power struggles, back biting, turf wars, and blind ambition.

These are important messages in the book for all women in business and especially for those in the traditionally less political career tracks who want to advance to leadership positions – women in science, R&D, Information Technology, engineering, and other technical fields.

    The authors successfully help readers, who hate the thought of workplace politics, reframe how they think about power and politics. They offer useful and practical advice even for the political novice.

    The further you advance, the more vulnerable you are if you remain politically naive. The authors claim in their experience ethical political skills are a leadership competency.

    If you want to get ahead, but are so opposed to the concept of politics and to any of the ideas in the book the day will come when your subject matter and expert technical status are no longer good enough for you to advance. Your career will plateau. Shunning even high integrity, ethical politics can mean you are destined to succeed only in a job in the ranks below management and leadership. If you do progress into management you are at risk to derail in all but the most non-political cultures.

    The Ins and Outs of Embroidery for Team Sports

So how do you know how many stitches your logo has in it until you get it digitized? Most digitizers can give you a pretty good estimate before they begin digitizing your logo. Getting an estimate on the cost of digitizing your logo will help you keep your expenses within the range you expect when you actually place the order.

    After you have had a logo digitized, be sure to keep a copy of it on file for the organization you’re representing. Doing so will enable the team to avoid the digitizing expense when placing future orders. Digitizing can become expensive quickly, especially if you are only placing an order for a small number of uniforms, so it’s obviously best to try to avoid that overhead.

      Pricing

    Pricing with embroidery is most often done based upon the stitch count of your logo, which determines the time it takes for any particular embroidery machine to complete the logo. Usually embroiderers give price breaks according to the quantity you are ordering. Of course the pricing varies from one company to another. Here are some benchmarks. If you want to have a left chest logo put onto a typical windbreaker jacket and you are ordering twelve of them, you’ll likely pay about $5.00-$6.00 per embroidered logo for logos that are under 7,000 stitches. If you are ordering less than that quantity, you may find that your embroiderer charges a setup fee as well. Pricing beyond 7,000 stitches usually goes up on a per thousand basis. You can normally expect to pay an additional $0.50-0.60 per thousand stitches beyond 7,000.

    For an order of hundreds of jackets compared to just ten or twelve, you should get a price break from your embroiderer. Most companies will go down to a threshold price (say for instance $3.00 per logo for a 7,000 stitch logo) based upon a certain quantity – say 200 articles. Beyond that number of embroidered logos, the pricing will stay the same no matter how many more you have done.

      Lead Times

    We find that many of our customers contact us in a rushed hurry, often times asking for miracles. Many times we are able to meet their demands. However, to be a preferred customer, it is best to allow one and a half to two weeks for your order to be embroidered and delivered. Most embroiderers don’t keep an inventory of all the products listed in their catalogs, so you need to plan a few extra days to have those shipped from the manufacturer to your embroiderer. Planning ahead can save you and your embroiderer a lot of headache and stress.

    In Tough Times, College Students Must Cut Expenses

    For far too long, college students have spent money that doesn’t have to be spent. Now, with the economy faltering and the cost of college at an all time high, more students are dropping out of college for financial reasons. Other students are leaving college with huge debts and a twinge of fear. That’s why wise students are aggressively looking for every possible way to cut their costs and increase their income.

    Here are a few ideas for students and parents to consider.

    Seek Out Grants, Scholarships And Financial Aid, Not Loans – Over the past thirty years, colleges have lulled parents and students into thinking that loans are financial aid. They are not. Loans have to be paid back. They place a large and immediate financial burden on graduates and often last for more than twenty years. True financial aid is money that doesn’t have to be paid back. Since it exists in many forms, students and parents should start looking for aid in the junior year of high school. This doesn’t mean that students won’t end up with some loans. However, if good students start early and work diligently, more true financial aid will flow their way.

    Start Off At A Community College – Students can dramatically cut their costs by attending a well respected community college for the first two years of college. At the same time, if they seek financial aid, work at a part-time job while in college and also work summers, they can completely avoid taking out loans.     Anatomy Of An Internet Marketing System

    Please let me tell you about the Internet marketing

    systems I use and find helpful. This information may be

    of some benefit to you, especially if your goal is to

    monetize your site or earn an income from your online

    marketing.

    My name is Titus Hoskins and I own and operate a very

    Yes, studying them, since I have an art background I like

    Internet marketer. Last week my marketing efforts make me

    around a thousand dollars; don’t know if that qualifies me

    as an Internet marketer or not. Probably not. Most of the

    people I associate and have contact with, usually make that

    in a day — the real smart ones make that in an hour.

    A thousand dollars in one hour?

    How is that possible? Well, the marketing experts who

    earn the big d’s — usually have complex automated marketing

    systems set up and operating on the Internet. These systems

    start with their own products but quickly expands and builds

    with large opt-in lists or ezines, 1000′s of affiliates,

    large JV networks, multi-sites, viral marketing, membership

    forums, brandable ebooks, online marketing tools/resources

    and the list goes on…

    No doubt you may have stumbled across some of these

    marketing systems on the Internet… one of the first

    I really encountered was Internet Marketing Center run by

    the late Corey Rudl who died tragically in a car crash at

    the young age of 34. I made my first affiliate check

    through Corey’s system and it changed the way I looked

    at the Internet forever. And the check was only $5!

    What made me earn that $5 was not only my own efforts but

    more importantly the whole marketing system behind IMC.

    It took an ordinary webmaster and showed him how to market

    on the web. It showed me the way. More importantly, it

    also taught me Internet marketing is a skill anyone

    can learn.

    These marketing systems can be good places for the

    beginning marketer to learn those skills. There are many

    marketing systems quietly working the Internet. Some of

    best (in my opinion) are Ken Evoy’s whole Site Sell system,

    Marlon Sanders Higher Response Marketing, John Reese’s

    Traffic Secrets, Bryan Winter’s PushButton Publishing, Jeff

    Mulligan’s CBmalls, Nitro Marketing…

    These Internet marketing systems are all different, yet

    they all have common elements or features that make them

    very effective and very powerful marketing systems. A close

    examination of the different components or parts might

    give you a better understanding of what makes these

    Internet marketing systems work.

    Here’s a list of different parts of an effective Internet

    Marketing system:

    * Founder or Helm: All these marketing systems have a strong

    leader or founder at the helm. A very vocal and forceful

    communicator or spokesperson is needed as a focal point.

    And like any company, its only as good as the person leading

    it. Because the Internet is still a very ‘scary’ place for

    the average user; a friendly outgoing spokesperson is

    needed to break those barriers (real or imaginary) down.

    * Unique Product or Products: Most of the effective

    marketing systems have their own products to market.

    These can be digital info products, web building/hosting

    packages, or even self-contained marketing systems. Or all

    of the above. Some popular products that come to mind would

    include Ken Evoy’s whole Site Sell and SiteBuildIt line,

    or Jeff Mulligan’s CBmalls promoting the well known digital

    download affiliate site ClickBank.

    * Databases or Lists: All these systems collect and keep

    large databases or opt-in permission contact lists of

    customers and potential customers. The real net value of

    any marketing system is in the quantity and more importantly

    the quality of its lists. All deliver a weekly or daily ezine

    or ezines to these lists. Consider these Databases as the

    engines that empowers any Internet marketing system.

    * JV Networks: Most have large Joint Venture Networks or

    contacts that will kick-start any new product. Momentum and

    sales are created with these JV partners. An ideal JV partner

    is a well respected online marketer with very responsive and

    very large opt-in lists. If Databases are like engines, JV

    networks will fill those engines with the fuel they need.

    * Affiliates: The best marketing systems use 1000′s of

    affiliates to promote and market their products. This is

    usually done in-house with their own affiliate program or

    onsite software set up. Some use third party affiliate

    programs like ClickBank, 1ShoppingCart, Commission Junction,

    LinkShare, or Shareasale. Your ignition.

    * AutoResponders: One of the most effective marketing tool

    these systems use, autoresponders are essential for delivering

    the sales. A series of follow-up e-mails will increase those

    sales dramatically, studies have shown that it takes 6 or

    7 follow-ups before someone purchases your product. Consider

    the autoresponder like a fuel injection system.

    * Tracking and Marketing Resources: All have extensive

    tracking and marketing resources, usually located online

    within a membership site. An easy to use and accessible

    tracking system for affiliates is needed. So too are

    marketing resources such as banners, links, coupons,

    graphics, seo tactics, landing pages, lead capture pages,

    brandable reports, articles and ebooks. Obviously, your toolkit.

    * Viral Marketing: All great Internet marketing systems

    use viral marketing techniques. This can be as simple a

    brandable reports, articles, software or eBooks. Affiliates

    can embed their own IDs and pass these viral products along

    to their friends and visitors, these useful viral products

    then get passed around all over the web. Creating links,

    contacts, buzz and funneling prospects back to your

    marketing system. Consider it your Turbo Charger.

    * Online Forums: Many of the better Internet Marketing

    systems will have an online forum where members can network

    and interact. Offering workshops and tutorials. This is a

    vital community building tool that must not be overlooked

    or underestimated. It will greatly enhance the effectiveness

    What Are You Getting From Television? What is Television Getting From You?

    It was not as hard as I thought it would be. My wife and I had purchased a new townhouse; similar to what you would find in Brooklyn Heights, but this is Toronto. We had made the choice not to have television in our new place, having spent the better part of every evening in our basement apartment staring blankly at it. Cold turkey was how we decided to go, no weaning off the boob tube.

    It has now been well over 18 months without a telly. Why is it when this comes up in conversation the recipient inevitably says, “Oh… well I don’t watch that much television, just…” as if by underestimating their television viewing habit will alter the fact they watch television. Frank Lloyd Wright defined television as “chewing gum for the eyes” and we all love a good chew now and then.

    Here is a stat that scares the hell out of me. According to the U.S. Census Bureau, in 2003, the average American spent 1,745 hours watching television! This works out to 145 hours a month, which if my math is correct is more than six full days sitting in front of the TV. Our bodies are not engineered for just lengthy inactivity. If you are going to spend 6 days of every month watching television at least stand to burn more calories.

    Who says there’s never enough time? The extra time you always craved of having is as easy to obtain as turning off your TV. That simple act alone will give you ample time to do those things you have kept saying you never have time to do. Would I be writing this article if there was television in my home?

    Imagine what you can do with 6 more days per month… 5 hours per day. Give yourself an additional 5 hours per day means you can:

    · Get a part-time job (earn extra money).

    · Give more of yourself to your career (further your career).

    · Take a course, class; earn a degree, certification (further your education improve a skill, learn something new).

    · Immerse yourself in a hobby.

    · Read

    · Exercise (take better care of your physical self)

    · Meditate (take better care of your mental self)

    · Cook great meals for your family and friend and enjoy their company (socialize; keep up with friends and acquaintances).

    · Get a good night’s sleep (you should not watch television before going to sleep).

    Who says there’s never enough time? The extra time you always craved of having is as easy to obtain as turning off your TV. That simple act alone will give you ample time to do those things you have kept saying you never have time to do. Would I be writing this article if there was television in my home?

    So what have my wide and I been missing without television. The radio, Saturday newspaper, Internet provides us with our news and entertainment so staying current has not been a problem. On those occasions we need visual entertainment there’s always the movies, theatre, concerts and simply putting a DVD in the laptop on those rare occasions. Other than missing a few cooking shows today I do not miss television and its after effects. What you watch marinates in your mind

    Television told me I had problems… dandruff, bad breath, gingivitis, lack of sex appeal. Hate your body, hate your clothes, hate your friends, hate you car so you can love the body, clothes, friends, car you see on television Thank God the answers to my problems could also be found on television, usually moments after being told of my new ailment. Homer Simpson, that cartoon sage of American mainstream wisdom observed, “The answers to life’s problems aren’t at the bottom of a bottle. They’re on TV.”

    Television creates and then shares our collective delusions and anxieties. What better way to spread propaganda than with words and animated image? Nothing beats the telly for creating and supporting a conspiracy theory. We all love a good conspiracy theory; especially when documented with unaltered film footage. Alien autopsy, the grassy knoll, Elvis spotted pumping gas outside a 7-Eleven in a New Orleans suburb… it all must be true, we saw it on television. You know you are watching too much television if you are using fictional characters, animated ones at that, to support your argument.

    Not long ago I came to realize television’s hypnotic effects were causing my stress and bruising my self-image. I was comparing myself to a superficial world created to destroy, or at the very least question, my self-esteem. Now that I am spending all my time in the real world I see I am no different that everyone around me, what a relief! Not have a rail thin body, wearing up to the moment fashion, surrounded by flawless supporting characters, was beginning to deflate the little ego I had left. It turns out television is designed and written to manipulate our emotions and it does a damn good job at it.

    Take the first step to gaining 5 hours a day; remove your television from you home. You will go through withdrawal symptoms like I did, but believe me I know from firsthand experience it will only last a few weeks and by not watching television you will have extra time to get over your TV addiction. Today my mind breaths easier.

    A beginner online often gets confused at the mention of a website and a blog. What is the difference? Which should I go for or start with? What are the advantages of a website and that of a blog? Answers to all these questions are what is provided in this article.

    What is a Website?

    A website and a blog have their place. It shouldn’t be a matter of which is better but which is more suitable for your reason online. It is what you intend to achieve that should determine which to start with. Both can work hand in hand.

    For the reason that all fingers are not equal, the first advantage of a blog compared to a website is that it is cheap to create. With $20 (max.) you could have a hosted WordPress blog while it is a different matter entirely with a website. And if you can not afford $20 for a domain and hosting service you could of course start with a free hosting service though it is not the best, but you could start with it and not spend a dime. You can get a good free hosting service from blogger, owned by Google. Using blogger you could even have your blog tied to Google AdSense account. That way you get your hosting service for free and also make money. Cool right? I thought so too except that it is not the way to go for serious blogging (professional).

    Blogs are cheap to maintain

    Since creating a blog doesn’t in all cases require you having a skill, virtually anyone can start and run a blog, but for a website you need an HTML and website designing skills.

    The simplicity of creating a blog has resulted in the more than 130 million blogs available online today and the number increases everyday, as thousands of people who never could have afforded a website are now settling for blogs and in some cases making good money from it.

    Blogs are easy to update

    To make a post on a blog all you do is log in to the dashboard of your blog, write your content and click on publish and in minutes your post will be visible to everyone online who visits your blog to read. In the case of a static website, to upload an article you first have to open your editor, FrontPage, Dreamweaver e.t.c. write your article, update page properties, before you could upload the page using FTP software. Depending on the techniques you applied, it could take months before your website is indexed by Google.

    Blogs allow a written text, audio and video. And you can have it online in a matter of minutes this is not exactly the case with a website. You will have to spend some money every time you want to make an update to your website if you do not have the skill to manage a static website.

    Blogs organizes itself

    Blogs automatically organizes its content by date and category. And with a blog built-in search, readers and search engine spiders can easily run a search on your blog and find what they are looking for. For a static website you have to personally organize its pages.

    Blogs could be Ping

    Blogs could be ‘pinged’ so Google is alerted whenever you post fresh content and visit your blog to index it. Though this is also available in static website but you will spend more time than is necessary to should it be a blog on Search Engine Optimization (SEO), to have the website show up in search results.

    Search Engines Love Blogs

    Search Engines love blogs because of it regular fresh content since that is what readers search for online and search engines would not make millions if readers do not get fresh regular contents to read. And so blogs tend to get indexed easily and in time than a static website.

    Search engines also push blogs higher up in search displays than static website just for it fresh content. Static website though could contain some articles but they are mainly designed to promote products and services.And might not be updated for months. And most website designers are mostly concerned about the appearance of their website rather than the content in them and maximizing Search Engine Optimization to get traffic.

    Blogs allow readers to freely express themselves through Comment Feed

    The Comment Feed in blogs creates a forum for people to express themselves in an informal way and interact with others hence building strong relationship and trust between you and your readers. And that is the essence of blogging because once they trust you, you become real to them as a professional in your field. So later in future when you suggest or offer them any relevant product (s) for sale, you will have large numbers patronizing you. Which at the end of the day is the reason why we blog or at least why most of us blog – Advertise and make money. A static website does not allow this, when and if it does, discussions are usually very formal.

    But to get readers to comment, you have to regularly provide what they could comment on which is valuable content.

    Blogging requires time since you will have to update your blog regularly with relevant content.

    Website or a Blog, which should I go for now?

    Like I said before it all depends on what you are trying to achieve. That is why I have outlined the features, advantages/benefits of a blog so that you can tell which meets your goal.

    If you are a complete beginner online it is better you start with a blog. Use that as your learning curve. Presently there is nothing that you want to do that can’t be achieved with a blog.

    Who are these amazing personal trainers that train the stars, professional athletes, celebrities, rock musicians, and the rest of the rich and famous?

    Well, being a personal trainer and a perfectionist, I did some research to find out who they are and how one becomes a personal trainer to the stars. The research I uncovered about these so-called celebrity personal trainers that charge fees of $300+ per hour for their expertise indicates that, like the rest of the personal training industry, there are no requirements of any sort to become a celebrity trainer. Most of these celebrity trainers simply happened to be in the right place at the right time.

    I had a close friend who was in a car accident. Since the insurance covered it, he went to see a chiropractor after the accident. During the first few visits, he and the chiropractor got to talking, and they hit it off. The chiropractor happened to know some celebrities, and just by knowing him, my friend got a gig training a star. Fortunately, my friend had a good knowledge base and was great at working with people, although the chiropractor had no real way of knowing this at the time. There was something in it for the chiropractor, though, in that he got a cut for recommending the my friend to the celebrity.

    Mangers of celebrities would be doing their star clients a favor if they used a little more caution when hiring personal trainers and the like. As with any referral, a thorough screening and background check are in order before simply hiring a trainer on some other celebrity’s say-so. Unfortunately for the client, the endorsement by another famous person is often all it takes for an unqualified musclehead, who knows virtually nothing about how to work with people or train the human body, to get in the door.

    Just Because They’re Famous Doesn’t Mean They’re Knowledgeable

    I want to state that I am by no means bashing personal trainers who work with stars, or any individual’s personal trainer — although it’s always important to find and hire a trainer with the highest level of education, experience, and certifications. Unfortunately, it’s not necessarily the people with the best qualifications, but rather those with the best marketing and biggest mouths who usually get all the attention. Take note: This DOES NOT MEAN they know a hill of beans about training. The thing about the lack of regulation in this field is that you don’t really have to be very well-qualified to get a job doing it. If you’re good at causing a big commotion and conveying confidence about your ability to make people feel good, you will succeed in the business, whether or not you can actually deliver on your promise.

    Take a look at the industry and you’ll see that celebrity personal trainers are a dime a dozen now. All the biggest stars — Britney Spears, P‑Diddy, J‑Lo, Oprah, Madonna, Tom Cruise — have personal trainers. Even the trainers themselves are getting famous now, just because of their celebrity clients. Two of the most celebrated personal trainers are Bob Green, Oprah’s trainer, and Gunter, trainer to many celebrities.

    I have watched many of these personal trainers on the news and listened to their advice about which diets work and which are the best nutrition products on the market. Trust me, their biggest gift is their ability to get in front of a camera to sell their products, because their advice is questionable, at best. Still, no one can argue their ability to generate millions of dollars because of their proximity to the rich and famous. The sad part is that they’re making a large portion of their money by exploiting millions of uneducated, unmotivated people, playing on their unrealistic desires to look like the next celebrity on the big screen.

    We’re Not All Going to Look Like Supermodels or Professional Athletes

    Let’s say you work really hard and you’re in the best shape of your life, but you still don’t look like your idealized image of the perfect man or woman. People, let’s be honest with each other. Not everyone is going to look like Pamela Anderson or Brad Pitt. Genetics play a big role in our looks, not to mention the cosmetic enhancements created through plastic surgery, air brushing, and camera tricks. Being healthy and fit doesn’t mean you will never have a little fat on your body. Looking great and feeling great without the aid of drugs, cosmetics, and surgery will take you to better places than any amount of fame will ever give you.

    Before you decide you want to look like a cover girl or a superjock, it’s really important to get comfortable with yourself exactly as you are. Sure, you’re going to feel better as you lose weight and build muscle, but the you inside is going to be the same. Yes, your shapely new build may inspire confidence, but the raw materials of your personality are going to be exactly the same. Are you fundamentally happy with your life and who you are now — or are you waiting around for external improvements to make you feel better on the inside? Just like the roots of a plant determine the quality of its fruit, it’s the invisible, internal stuff that determines the happiness of your external life.

    Celebrities Whine & Complain Just Like Everybody Else

    As a society, we’ve been trained to look up to people whose job it is to pretend everyday to be someone other than who they are. And because of the glitz and glamour associated with their Hollywood lives, we put them up on pedestals and give extra weight to what they say — for no reason other than the fact that they’re famous.

    I hate to break it to you, but I have trained some celebrities and stars — and the truth is they are no different than you or I. Granted, it’s their job to look great all the time, so they spend a ton of time and money making sure they keep on looking good. But they whine and complain just as much as the rest of us. Wouldn’t you love to get paid to look good, rather than paying someone to help you look better?

    Once upon a time, only celebrities hired personal trainers, in part because only celebrities could afford them, but also because looking good was viewed primarily as the arena of the famous. It’s good to know we regular folks are getting smarter, in that we’re beginning to realize just how important personal training is in the lives of everyone, not just famous people. If you think about how important a healthy body is to every aspect of your life, you might come to realize that a good trainer is more important than your hair dresser, your CPA, or even your mechanic. In fact, a personal trainer is a mechanic — only the machine he or she works on is not a car, but the most important machine you will ever own: your body.

    Personal trainers help keep you healthy by motivating you — and the celebrities — to get in shape and keep off the fat.

    The Results of Quick-Fix Shape-Up Programs Never Last

    I am constantly amazed when I hear celebrities and their personal trainers promoting their diets and/or nutritional products. If the alleged “professionals” holding the media limelight still don’t know how the body functions (and far too many of them don’t), it’s no wonder our nation just keeps on getting fatter. There are two significant problems with quick-fix formats for training and nutrition. First, these extreme exercise and diet regimens that quickly get stars in phenomenal shape for a movie role or a tour are terrible for the body. Yet many celebrities are willing to do whatever it takes to get in shape as quickly as possible because they know their jobs could be on the line. Secondly, regular people, fans of these fabulous-looking stars, try to follow the celebrities’ diet and exercise programs, only to wind up failing, both because they cannot keep up the extreme regimens and because the programs are unnatural and impossible to sustain for any length of time.

    Remaining super-lean year-round can be challenging, especially if you’re on an exercise program that leans you down in as little as 8 to 12 weeks, such as a bodybuilder’s diet and exercise regimen. This process can get you looking phenomenal for a day or two, but I guarantee it won’t last much beyond that, because our bodies simply cannot function at that level for any sustained period of time. However, you can achieve these results and stay super-lean year-round with a lifestyle change that incorporates healthy meals and regular exercise. A program like this is geared to burn fat as opposed to primarily building muscle, unlike the regimens celebrity personal trainers often put their star clients on.

    The thing is, short-term training programs to get in shape for a one- or two-day event (like a bodybuilding contest) do work, but because they occur at an unnaturally rapid pace, they cannot be carried out for any real length of time, at least not without doing serious harm to the body. But sure enough, most celebrity personal training programs are designed around this quick-fix process because so few personal trainers really understand anatomy and human kinetics, the science of how the human body functions. There are well-educated trainers — they just happen to be unfortunately rare. I have worked in the industry for many years, and seldom encounter other trainers who have degrees or even quality certifications, or who continue to develop their education and expand their knowledge about human function and performance. In this unregulated industry, no one is checking to see if personal trainers are performing any kind of continuing ed — and I promise you, most are not.

    All this is not to say that you should not hire a personal trainer. Hell, even personal trainers who know hardly anything about creating a quality exercise or nutrition program still can create an environment where you can get in great shape. They can motivate you to achieve better health and make much further progress than you would likely ever accomplish on your own. Almost any personal trainer is better than no personal trainer. Almost.

    Differing Levels of Training Experience — and Results

    Certainly there are people reading this who feel they can do it — the fitness program and healthy diet — all on their own. More power to anyone who can create a healthy eating plan, incorporate a weight training routine, and practice a regular cardio regimen on their own. Please know, however, you are the extreme exception. For many people, the problem isn’t in creating the program or even finding the discipline to commit to it. The problem is that in trying to do it all themselves, they are creating the wrong program for the results they wish to achieve. These are the folks who train regularly, yet see little or no results. They then get frustrated and quit, thinking they have tried everything when it comes to losing fat, that they simply must not be disciplined enough — when, in reality, discipline has very little to do with it.

    There also are those who think they know a lot because they’ve achieved great results on their own, when in actuality, they’ve just been blessed with good genes and would benefit by doing almost any kind of exercise. Most of your models, movie stars, and celebrities fall into this category, so any exercise and nutritional program a personal trainer gives them is likely to work like a charm. Under the guidance of a knowledgeable personal trainer and certified nutritionist, these people would see more and better results than they had ever dreamed possible. And the best part would be that the results would last, rather than simply providing the short-term fix they’ve become used to.

    Lastly, of course, are the people who don’t care about their health, don’t have time to exercise, or never exercise, because exercise hurts, they hate to sweat, or their self-esteem is in the toilet and they figure it’s a waste of time to even try. While this sort of personal apathy toward preserving one’s health through exercise and proper eating may seem like no one’s business but the individual’s, it really is a very selfish act. Treating your body well, including getting regular exercise and eating healthy food, is the most unselfish thing you can do. Think about it — if you don’t take care of yourself now, sooner than later, others will have to take care of you. Since you were too lazy, busy, or depressed to invest the time or energy in staying healthy, you will, inevitably, make others suffer.

    A Qualified Trainer Will Tailor a Program to Meet Your Needs

    If companies and governments were wise, personal trainers would be mandatory and health insurance would cover them. Well, a guy can dream, can’t he? Seriously, even if you only see a trainer once a week — or even once a month — to check in and make sure you’re performing your exercises properly, it’s better than not seeing one at all.

    Take the time to do the research, and then invest in a qualified trainer who is knowledgeable about how to help you achieve your personal goals. If you have a special need — a back injury, joint problems, limited range of motion — find someone who can address your issues specifically.     Fame Doesn’t Equal Expertise — Particularly in the Health & Fitness Industry

    Celebrity personal trainers, spokesmodels, movie stars, athletes, and other rich and famous people probably got where they are because they’re great at what they do. That does not mean you should follow their advice about health and nutrition. You probably wouldn’t ask a plumber advice about how to change your car’s oil, would you? Likewise, celebrities may look good, but that doesn’t mean they — even celebrity trainers — know anything about proper exercise and nutrition. Hire a health, fitness, and nutrition professional. They are the only people whose advice you should take regarding these subjects. Even medical doctors generally are not the best advocates for proper fitness and nutrition, because they are trained in specific fields and seldom are aware of how all the parts of the body work and move in cooperation.

    Have you ever noticed how some of the famous people dishing health advice are not even in that great of shape? Why would you take advice from someone who isn’t in peak physical condition? That’s like getting your hair cut by a stylist with a bowl cut or having a gap-toothed orthodontist install your braces. Not to mention that anyone can look great, but still feel terrible because they achieved their looks through an unhealthy method.

    Research Pays Off When Searching for a Qualified Trainer

    The thing is, you don’t know what you don’t know. As a result, many people fall into the trap of buying the baloney stars like Britney Spears, Oprah, and Dr. Phil are selling. And even though a star might actually have a fabulous, incredibly knowledgeable trainer, a lot can be misinterpreted between the time the trainer offers exercise or diet specifics to his celebrity client and the time that celebrity repeats the info to his or her adoring public. It’s like that game of Telephone you played when you were a kid — by the time the information reaches you, it has turned into misinformation.

    How do you know who to believe anyway? One star says they got great results by simply lifting weights and eating fewer calories. The next celebrity says they lost tons of weight by eating a low-fat diet high in protein. Another famous somebody swears by a daily swim, lots of veggies, and whole lot of good carbs. Arghhhhhh!!!! It all sounds confusing as hell. And, in a way, it is.

    A program that’s right for a size-2 supermodel probably is not right for a heavy stay-at-home mom who is just now learning to incorporate any exercise into her day. The proper program for an individual depends on his or her biochemistry and the specific way their body functions. Understanding human kinetics is not as easy as A-B-C. When it comes to the human body, there may be many underlying reasons why one person begins a simple walking program and, voila, they look phenomenal, while another person runs, lifts weights, and kills themselves in the gym, only to step on the scale and find they’ve gained another pound.

    The human body is awash in mysteries, and a good personal trainer will help you solve yours so you can lose all the fat you want and add all the muscle you desire. Again, personal training is all about you and your results. And even if all your exercise and effort don’t drop a pound off you — if you see no noticeable changes — know that the exercise is benefiting your body and your health, and it would be stupid to discontinue your program. Rather than quit, find someone to help you fine-tune your regimen so you can begin to see the results from all your hard work.

    The main thing is this: Don’t follow someone’s advice just because they claim to be a personal trainer to the stars or charge $300 an hour. None of that means their program will get you the results you want. There are no healthy quick fixes. Get on a quality exercise program and eat properly, period. Don’t waste time, money, or energy, only to become frustrated. Do the research and hire a professional who can give you sensible advice that will get you on your way to looking good and feeling great.

    Dining Out – Top Things You Should Always Expect During Your Proper Dining Experience

    Have you ever decided on a whim just to treat yourself and your family to a nice dinner only to discover once you arrive at your chosen restaurant that it may turn out to be much more like something you’ll regret? Sure. All of us have been there many times. But, honestly, this should never ever be happening. These are businesses and in order to stay in business, they need to take care of their paying customers. I have provided some tips for both families and individuals for things to look for before spending any well-deserved time or money into a negative dining experience and for restaurants desiring some simple and honest feedback from customers desiring to share their opinions.

    Recently, I took a group over to a restaurant for a friend’s birthday. It was a pleasant atmosphere and, unfortunately, that is where it ended. You see, we had made reservations and informed the restaurant that some of our guests would be running a bit late. They said it would be ok. To our surprise, as soon as we got there, we were told that we could not sit down until a majority of our party has arrived. I would like to add that there were plenty of open tables, but none suited for this group. They did give us and the kids along with us the option to sit at the bar if we would like. We, of course, declined. Our guests did not arrive. We finally negotiated a table in the very, very back of the restaurant as it would not be one those with qualified reservations would desire. Mind you, everyone had dressed very nicely and there were no complaints.

    After waiting a bit too long, I decided to work out the table that no one would be demanding as all we wanted to do was get our appetizers going. As we sat at our table, the music was blaring and a local fraternity was there having a meeting at a reserved table that a majority had arrived in time to be seated at. To make a long story short, the service turned out alright and we decided to keep it positive and not let this situation affect us negatively. We did have a fun time. Afterwards, I began to think about some things that people and restaurants alike should always consider when about to make a transaction. First, when first walking in the door, guests should always be greeted nicely and instantly feel a warmth of hospitality. Customers are not just another check for the restaurant’s books. Next, if a party makes a reservation for 6 pm and the restaurant accepts it, the restaurant should always honor this promise. The guests should never have to wait for over an hour just because someone overslept.

    Getting seated in a timely manner would only be the most courteous thing for a business to do. That is if a dining experience is what they are selling. Next, when you are seated, you should never be stuck in the back of the restaurant just because those with reservations who have not shown up yet or even those ‘regulars’ who like that large table in front at 6pm prefer it. Every guest should be treated like everyone else. In addition, if customers do decide to have something at the bar, the customer should always have the right to transfer that amount to their bill. This method of making customers close out their bills over and over really is not an example of customer service at all. Try to keep things more convenient for the customers. The bill should be handled at the table when the service is complete.

    Many restaurants do not seem to recognize that many people do not prefer loud music when they are spending a lot of money dining out. Many prefer a pleasant atmosphere. Why many restaurants that normally serve elegant dinners jam 80′s tunes is not understood by me, but one thing restaurants should consider is that the noise level only makes things louder, including the kids. A few more things I would like to mention are in regards to the withholding of certain items such as wine lists and other special menus. Just treat each customer equally. I have witnesses this at restaurants where we received these menus but the other table ordering just water to drink did not. All customers should be treated respectfully meaning keeping positive judgment on people. At the beginning of the meal, if the customer does not want the special, yet, would like a description of one of the regular items on the menu as if it were the special, the waiter should be able to do that. This is oftentimes rather annoying to many people dining out. Maybe restaurants should quiz their employees from time to time?

    Surely there are plenty of things a person could complain about, such as no salt and/or pepper at the table, or even proper utensils, but the goal here is not to bring anyone down. The goal is to simply make other people aware of some of the things people go through when all they wanted was a nice dinner experience. These things should be a foundation with not just the restaurant business, but with any business. As it seemingly gets more and more competitive daily, wouldn’t it be a great idea to treat those who are helping you out with the utmost respect and dignity? One thing to remember is that if those businesses that do not honestly make customer satisfaction their number one priority will surely find many more that will.

    Tips For Cooking With Real Firewood

    I love to cook over real fire! Whether on a gas grill, charcoal grill, smoker grill, fire pit or even in my fireplace, cooking with fire is fun and creates unique and delicious aromas and flavors that enhance many foods greatly. But by far my very favorite way to cook is over a real hardwood firewood fire. While good charcoal and smoker cooking can certainly give you some nice char-broiled wood flavors, there is nothing quite like a real wood fire. There is something very primitive and romantic about it, harking back to pre-modern times when food was all cooked over an open wood fire.

    Most people do not take advantage of real wood to cook anymore because technology has made things easier for us. Between gas stoves and grills and easy to light charcoal, cooking with fire is quick, easy and pretty much hassle free nowadays. However, there is something to be said for a leisurely afternoon, building a real fire and then using that fire to perfectly cook your grilled meal. Sometimes I don’t want “quick”, “easy” or the bare minimum.

    So for all those like-minded grillers out there, those who want to get a little more primitive and a lot more delicious, here are some tips for how to cook with real firewood on your grill, fire pit or even in your fireplace. It takes some time and it take some practice to get right, but I think you will love the results!

    Choose Good Hardwoods

    At the heart of great wood cooking is good firewood which burns long, hot and gives off savory aromas. Don’t skimp in this department! All of the smoky, grilled flavor that you get in your food comes from your wood so if you use bad wood, your results will be bad. So what is bad? First of all, avoid softwoods in general.

    Softwoods burn easily and hot but don’t burn as long and don’t tend to develop long-lasting hot embers at their core. Softwoods, like pine for example, also tend to be fairly resinous and many give off piney or other sharp smells which, while not unpleasant, do not pair well with food. You can use softwoods to help get your fire started, but what you really want for the majority of your firewood is good, seasoned hardwoods.

    Hardwoods are denser and will burn longer and hotter. They take longer to get started, but the extra work is worth it. There are dozens of hardwoods that make great fuel for cooking, some of which have very distinct and delicious aromas and flavors. Oak is very common, which gives off a rich, smokey aroma. I prefer fruit and nut woods as they tend to have a milder, almost sweet, aroma. Some excellent choices are almond wood, apple wood, pear wood, and pecan wood, if you can find them. Most people know about mesquite and hickory for smoking, but they are also hardwoods which make excellent fuel. If you happen to live on a vineyard, old grape vine cuttings make great wood for quick fires!

    Build Your Fire Ahead

    As I mentioned above, starting a hardwood fire can take some time to really get going. In addition, because you want to cook with embers as much as possible, you want to give your fire a chance to burn down as much as possible before you throw food on top. This can take quite a long time and depending on how much you are planning to cook and how big your fire pit or grill is, this can take literally several hours to build the fire, keep feeding it to build up a core of embers, and then let the large flames die down before starting to cook. Of note, while I generally prefer to do this type of wood fire cooking on an outdoor fire pit with a grill grate, most people don’t realize that you can burn a wood fire in most heavy duty charcoal grills as long as it is big enough. I have used the large Weber 22-1/2″ charcoal kettle grills to good effect as well as some Char-Broil charcoal grills.

    Cook with Embers

    As mentioned above, when cooking with real firewood, cooking over the hot embers is ideal. Why? A new fire, which has just been started does not give off much heat. Additionally, there are large flames coming up from the wood. If you lay a grill grate across this young fire, you will not get much radiant heat and instead will have big open flames lapping up around your food. This spells disaster for grill cooking! Your food will not cook on the inside very fast and the outside will catch fire and get burned to a crisp in no time!

    To avoid this and to get the most of your firewood, take your time and start early. Red glowing embers give off tons of heat and don’t have big flames. If cooking in a fire pit or large grill, start your fire early and keep adding wood for a while to build up a deep core of hot, glowing red embers at the bottom. Then let the top wood burn down until you barely have any flames left, just a big, deep pile of red embers. These embers give off a lot of heat and because they don’t have large flames, they are less likely to char your food to a crisp. Only then should you lay your grill grate across and add your food. If you are cooking a lot and the heat starts to die down, stirring the embers with a poker helps to get more oxygen to the wood and will increase the heat for a while. If you really need more fuel, you can add firewood to the side and only push it over, under the cooking area, when it has burned down and no longer has large flames.

    Rotisserie Cooking

    One way to get a lot out of your wood fire cooking is to use a rotisserie. There are various rotisserie contraptions that can be purchased at grilling and camping supply stores. These are basically a large motorized or hand-turned spit that rotates over your fire pit. This is advantages for several reasons. First of all, for large roasts, such as whole poultry, pigs, and other large roasts, it gives you a very even, consistent cooking heat throughout the meat so that your food stays succulent and evenly done.

    Also, for these larger roasts, laying them directly over hot embers can burn the surface long before the interior is even warm. Finally, the rotisserie can hold your food a considerable distance above your wood fire so that you can even cook over open flames without your food burning. If high enough, only the rising heat, not the actual flames, reaches your food, which is perfectly rotated in the aromatic smoke. Therefore, prep time is reduced as you don’t have to burn your wood down to embers first, although some embers help to supply adequate heat. For grilled leg of lamb and whole chicken and game birds, rotisserie cooking over a fire pit is one of my favorites!

    Fireplace Cooking

    In the winter it is often too cold outside to cook outdoors. However, many of us have a wonderful real wood cooking area right in our homes, although some of us don’t realize it. Most fireplaces are used exclusively for heat and ambiance these days, but years ago it was the primary cooking area in many houses. I love hearth cooking and it is not as difficult as most people think. For most types of fireplace cooking, special equipment is needed. There are fireplace cranes available which hold a handled Dutch oven pot or kettle over your fire to cook stews, soups or coffee. Fireplace grills are available which is basically a grill grate that sits over your firewood grate in the fireplace and allows you to grill any number of foods.

    Even fireplace rotisseries are available which sit just in front of the fireplace and slowly turn your roast meats. But if you don’t want to invest in any extra equipment, there is always string-turned fireplace cooking. Traditionally a way to roast a leg of lamb in front of the fire, I have adapted string-turning to roast a number of different types of roasts, from whole poultry to tri-tip. All you need is a long piece of kitchen twine and a screw or hook installed in your mantle above your fireplace. The weight of the roast slowly spins it on the string so that you have a poor man’s rotisserie without a lot of extra equipment!

    An Alternative

    Finally, if all of the above seems like too much work and too much hassle there are easier alternatives to infuse wood smoke flavor into your food. Using smoking wood chips or chunks in either a barbecue or dedicated smoker grill is an option. Smoker cooking can really give you rich, aromatic smoke flavors in your foods. However, because you are using standard charcoal or gas as a fuel source, you avoid much of the hassle of cooking with real firewood.

    I hope these tips help to get you started cooking with real firewood to bring your grill cooking to a new level of fun and flavor. Remember to always be safe when using fire of any type! Follow all basic fire safety rules so that only your food gets cooked!

They do have some pretty good quality jerseys in all colors and t-shirts are cheaper, but if you already have photos, artwork and publishing software to print your own, it is pretty easy to do!

    For one thing, there are so many different options to consider, when you want to design and print your own jerseys or t-shirts. Actually, there are some local shirt shops that will probably do it for a lot less than that, even if you are only getting one customized fantasy sports team jersey! You can buy iron-on transfer paper for your printer and use publishing or photo editing workshop software to get creative and make your own jerseys or t-shirts for much less. In fact, I think you can find the iron-on transfer paper at the office supply store and there are many free software choices on the Internet.

    That just leaves you searching for the design for your custom fantasy sports team jersey, but that shouldn’t be that difficult and you probably already have something in mind. It depends on what fantasy sport you are playing and whether you want to personalize your team or if you might already have a name. When you are designing your logo, be sure to think of fun animals or cartoon caricatures to include and you might be better off spending a little extra money to have this created for you by a budding and aspiring caricature artist!

    If you have a little talent and one of those neat little digital tablets, you can draw about anything and print it out, but make your design personalized and interesting or you might as well not waste the money! You can get ideas from the Internet or look at some of the uniforms that the college teams wear because they always have interesting color combination and logos. If you are into fantasy sports like I am, you probably already have the perfect logo in mind and a print shop or graphic artist might be able to handle the entire job for you, but you can find places on the Internet that are more affordable and let you get by without a minimum order.

    Where to Learn Tennis in Singapore

    Singapore has excellent tennis centres and coaching facilities. Learning tennis in Singapore is easy. I found that tennis lessons or tennis coaching can be arranged from the following entities:

    1.Private Tennis Lessons

    There are various levels of tennis qualifications offered by the Singapore Tennis Association (STA). Go for someone with at least a Level 1 qualification. Most would charge a basic fee of $50 per hour, excluding court booking fees, if needed. There are group classes as well, usually, not more than 3 persons. Try looking for at least 3 of your fellow friends who wish to learn to play tennis and get an individual tennis coach. It will save you some money while still being properly trained.

    2.Group Tennis Lessons

    Group tennis classes are found at the various public tennis centres. These classes are for both children and adults. The benefits of such group classes are that they tend to be cheaper. However, the class size tends to be larger and therefore, you may not pick up the skill as fast as you would have wished. It would be better to have a combination of group and private individual lessons. You will get the best of both worlds, playing with others and also being coached more effectively.

    3.School Tennis CCA

    Tennis is a CCA for some primary and secondary schools. Again, the class size tends to be quite big but it is a good and fun way to learn your tennis amongst your peers. It is also subsidized and is therefore, cheaper. Some schools make CCA compulsory and therefore, if tennis is something you child likes, make tennis his or her CCA then.

    4.Tennis Sections and Clubs

    Unfortunately, there are not many purely tennis clubs in Singapore. However, there are many country clubs with tennis sections. Tennis sections are a good way to start improving your tennis once you are able to play fairly well. Nothing beats playing more and more against someone of your level or higher.

    5.Tennis Academies

    Unlike the more established tennis playing nations, we do not really have a successful and quality tennis academy. Tennis is not even featured in the South East Asian games for Singapore. Hence, tennis is not one of those preferred sport which is earmarked for further development unlike its sister sport of table tennis. However, one can always head north to Malaysia or Thailand where they have various tennis camps which cater to all levels of play. It is an intensive and highly effective way of improving your tennis as you do nothing but eat, sleep and breathe tennis for a few days!
